Apple Butter
5 lbs. apples (or just fill up the crock pot!)
2 c. cider (even better with fresh-squeezed apple juice)
1 c. sugar
3 tsp. cinnamon
1-1/2 tsp. cloves
1/4 tsp. allspice
Dash nutmeg
Quarter apples; cook overnight in a crock pot with juice/cider,
sugar and spices. Mash in food processor, then cool. This apple
butter can be mixed with sour cream or mayonnaise for a fruit
salad dressing.
Apple Nut Bread
2 c. sugar
1-1/4 c. oil
3 eggs
3 c. flour
1 tsp. baking soda
1 tsp. salt
4 Tbsp. vanilla
3 c. apples, chopped
1 c. quick oatmeal
1 tsp. cinnamon
1/2 c. chopped nuts
Mix sugar, eggs, and oil. Add dry ingredients. Mix well. Add
other ingredients. Bake in a Bundt cake pan at 325 degrees
for 1-1/4 hours. This is wonderful with coffee!
Apple Dip by Diane Justus
8 oz. Cream cheese
1 tsp. Vanilla
½ c. powdered sugar
Blend together. Top with caramel topping (not too thick). Dip slices in the dip.
Granny Smith apples are good to use.
Apple Roll by Esther Davis
½ c. white sugar
1 c. brown sugar
1 stick margarine
1½ c. water
1½ c. flour
5 Tbsp. Water
½ c. shortening
Combine both sugars, margarine and water. Pour into a 13x9-inch baking pan. Place
in oven and bring to a boil.
Mix flour, water and shortening. Roll dough thin. Spread with 4 cups chopped
apples. Mix cinnamon with apples. Place apples on dough and roll up. Cut into
1-inch slices. Place in syrup in baking pan. Bake at 400 degrees for 30 minutes
or until lightly brown.
Apple Streusel by Gladys Connor
6 c. brown sugar
3/4 c. brown sugar
1/2 c. all-purpose flour
1/3 c. brown sugar
1/3 c. quick oats
1/4 c. butter
1/2 tsp. cinnamon
Toss together 6 cups brown sugar and 3/4 cups brown sugar. Mix flour, 1/3
cup brown sugar, oats, butter and cinnamon with a fork. Sprinkle mixture over
apples. Microwave for 9 to 12 minutes on high in a 3-quart Tupperware casserole.
Fresh Apple Cake by Lola D. Coston
3 c. plain flour
2 Tbsp. Cinnamon
1 Tbsp. Baking soda
1/2 tsp. salt
2 c. brown sugar, packed
1½ c. vegetable oil
3 large eggs
4 c. apples (Golden Delicious), chopped
1 c. pecans, chopped
2 tsp. vanilla
Glaze:
1 c. brown sugar
1/4 c. milk
1 stick margarine, softened
1 tsp. vanilla
Preheat oven to 350 degrees. Flour tube pan. Combine flour, cinnamon, soda and
salt; set aside. Beat sugar, oil and eggs in a large bowl. Add flour mixture.
Stir in apples, pecans and vanilla. Pour batter into a tube pan and bake for
55 minutes. While cake is cooling (10 minutes), make glaze.
Glaze: Bring sugar, milk and margarine to a boil for 3 minutes. Remove from heat
and add vanilla. Spoon over cake while hot.
Some hints about cooking with apples from the N.C. Apple Education Committee:
Use very little water...none for pies, Betties, etc. Add only enough for applesauce to keep from scorching.
Be careful not to use too much sugar. A little sugar highlights the natural apple goodness, depending upon the tartness of the apples. Too much sugar spoils natural flavor and makes them mushy.
When making salads, dip apples in lemon juice to prevent apple slices from turning brown. Golden Delicious and Cortland carieties stay whiter longer - naturally.
Many apple uses...The apple is the most versatile of fruits. Dice and slice for salads, sauce 'em, bake 'em, fry 'em, juice 'em.
